Our way of cooking
Good food begins long before it reaches the kitchen. It starts in the fields, in the forests and with the people who passionately produce high-quality ingredients. We carefully check the fresh trout from the clear Black Forest waters, take game directly from the forester, and talk to the farmer who keeps his animals on wide open pastures. Knowing the people behind the ingredients means quality, trust and true regionality to us.
Our head chef, Konrad Schwarzwälder, transforms these ingredients with skill and heart into dishes that let you taste the Black Forest - down-to-earth, refined and full of local character. As a Nature Park host, we focus on short supply chains, sustainable production and a style of cooking that simply does you good.

Fresh milk from the farm next door, game from the surrounding forests, crisp vegetables from Black Forest fields - as a Nature Park host, we focus on what our homeland provides. Our kitchen serves at least six regional specialities throughout the year and supports the people who produce them with passion. That means: short supply chains, full flavours and a real taste of the Black Forest in every dish.

We are proud to be part of the “Schmeck den Süden. Baden-Württemberg” restaurateurs’ association and have been awarded two lions. This initiative stands for the highest quality and the use of regional products. Our guests can be sure that they’ll enjoy authentic, traditional cuisine prepared with regional products from the Black Forest. This way, every bite becomes a true taste experience of the South.
